Blueberry Peach Salad with Blueberry DressingTotal prep time: 15 minutesServings: 4 1 medium peach, peeled and sliced3/4 cup blueberries1/2 cup goat cheese, crumbled1/8 cup candied pecans, chopped4 cups lettuce, torn into bite-sized piecesCombine all ingredients in a serving bowl and drizzle with blueberry dressing.Dressing1/8 cup balsamic vinegar1/4 cup blueberries1/4 cup olive oil1/8 cup honey2 teaspoons honey mustard1/4 teaspoon pepperPinch of saltBlend all ingredients in a blender or with hand blender.Farmers Market Succotash with Bacon-Wrapped N.C. ShrimpTotal prep and cook time: 25 minutesServings: 41 cup corn, 2-3 ears of corn1 cup okra, sliced in 1/2″ pieces1 large tomato, peeled, with seeds removed, and chopped2 cups green peas (or whatever peas or beans are fresh at the market)1/2 cup onion, diced1 teaspoon garlic, minced1 tablespoon buttersaltpepperpinch of cayenneSteam green peas for 3-4 minutes. Set aside. Melt butter in a large cast iron skillet. Add onion and garlic to melted butter and cook for 1 minute. Add okra and corn to skillet and cook for 1 minute. Add tomatoes, steamed peas, and cayenne pepper. Cook for 1-2 minutes until desired tenderness. Season with salt and pepper.When cooking with fresh vegetables it doesn’t take as long to get the vegetables to a crisp tender texture while preserving most of the nutrients.Broiled Bacon-Wrapped N.C. ShrimpTotal prep time: 20 minutes16 slices of center cut thin sliced bacon16 large fresh N.C. shrimp1/2 teaspoon garlic, minced1 tablespoon salted butterpinch of cayennePeel and devein shrimp.Microwave bacon slices for 60-90 seconds, depending on thickness, on a plate wrapped in a paper towel.Wrap almost fully cooked bacon around raw shrimp and place on baking sheet lined with parchment paper.Melt butter in a cup with cayenne and minced garlic. Brush bacon-wrapped shrimp with garlic butter mixture.Broil shrimp 2-3 minutes until opaque. Spoon succotash onto plate and top with shrimp.
